Is the cutting mechanism removeable for cleaning?

It's not like a "regular" can opener. It never goes into the can where it can touch food. It cuts on the outside of the lid - remove from the opener - then pull off lid with fingers - lid can be put back on later as a cover....! An amazing 'gadget'......I wouldn't use anything else! Answer: not removable because food doesn't get on it!

Will it open a # 10 ?

I don't think I have opened #10 can but I'm sure it will, it is the best can opener I have found. In 39 years have had several can openers and will never use any other. Have been buying them for my hole family your kids can help out in the kitchen.

is there a smooth touch that stops automatically

Not sure what you mean by smooth touch. It does not stop automatically, which presents no problem for me. It does cut the edge smoothly...no sharp blade. I'm still very pleased with my purchase!
