How hot is Rani Kashmiri Chilli Powder?

It is mild. Kashmiri chilli sits around 12,000 to 15,000 SHU, far gentler than cayenne, so you get a warm glow rather than sharp heat. Cooks describe it as warmth you can actually taste, without the sting.

What do people cook with it?

It is the colour behind butter chicken, tandoori marinades, rogan josh, korma, keema and biryani. Many customers also blend it into homemade curry powder, rubs and rice dishes where a deep red is wanted.

Is this the same thing as deggi mirch?

Yes. Deggi mirch is the Indian name for this style of mild, colour-forward ground chilli, so use Rani Kashmiri Chilli Powder anywhere a recipe or Indian cookbook calls for deggi mirch.

Is anything else added to the powder?

No. One ingredient only: sun-dried red chillies with the seeds taken out, milled fine and sealed. No fillers, no anti-caking agents and no added colour. Salt-free, vegan, non-GMO, gluten friendly and kosher.

How should I store it to keep the colour bright?

Keep the jar closed in a cool, dry cupboard away from direct sunlight and steam. Customers regularly mention how fresh the aroma is on opening and how well the sealed jar holds that bright red colour.
