These mics appear to have a plug for each mic (earbud) how can I plug this into my Zoom H2n which has only 1x 3.5mm input

The two plugs are not for each earbud. One plug is the 3.5mm mic and one plug is the 3.5mm headphone plug.

I'd like to know if I can (a) plug these into my computer and (b) record using Audacity. Thank you!

You will need two 3.5mm sockets - one for the earbuds line and one for the microphone line. Also beware that you need the correct power supply to and from your sound card. I'd say mostly these are meant to be used with portable PCM recorders rather than connected to a computer. That said maybe they will work fine for your requirements if you are using them with a laptop.
