Yes. I've used both, but the bar far mote often for all sorts of cakes and cookies. And if you're making chocolate chip cookies, chopping the bar gives you both small chunks, small bits and shreddings for a more interesting cookie.

If this is 100% cacao why does the ingredients say, “may contain tree nuts, milk, and soy.”?

Here is what happens - many items claim they are free of differnt food, but then put this disclaimer on the back - the reason being that it is manufactured in a facility that also uses these items to manufacture other items. I stay away from any foods that have this diclamer because the nuts, milk and soy are in the air and get inside the items that claim to be free of them. If you have any food allergies or sinsitivities, then don't purchase items with this disclaimer.

Is this processed with Alkali?

Alkali process is generally used with chocolate to remove oils to either make milk chocolate or cocoa powder. As this is pure dark chocolate, it shouldn't have been processed that way.

Melts better than the other brands, and I think it tastes better but that's a close call like "best among equals". It's excellent chocolate. Nuff sed. Makes excellent and nutritious brownies. Shipped very quickly. What else do you want, egg in your beer?

Ghirardelli, I am so glad that you made 100% unsweetened Chocolate bar. I have been looking for a good tasting chocolate that I could use to cook and bake with that I could add my own sweeteners too. Most chocolates have sugar or Malitol, or fiber, which I can't have. So, thank you for now selling you good tasting chocolate without any sweeteners or fillers. Just yesterday, I made the best Chocolate fudge pudding and then I made a chocolate cake with your Unsweetened Chocolate. Oh my, was it Delicious everyone wanted my recipe.
