What's the difference between this (gourmet), and the premium?

The powder looks & tastes the same in both containers. I think someone 'down on the farm' just has a sense of humor - calling it gourmet is a bit of a stretch - it's simply luminous orange 'cheezy' powder after all - but it's definitely handy to have in the pantry. Just choose whichever one is cheaper/oz. (We think it's much cheesier/nicer than their white cheddar version, btw.)

What is the serving size? The description says 3.53 as serving size. 3.53 what? I trying to understand how the calories count.

Serving size is 8 gm. about one tablespoon may have been teaspoon but I think it was table spoon. there are 141 servings per 2.5 Lb container. Go to the pictures of this product. one of the side pictures says this.

Does it need refridgeration after opening?

No it does not need to be kept in fridge. Keep it in pantry and it is fine

Will it make cheese sauce for eggs.

It makes a good cheese sauce for Mac and Cheese and for Broccoli. I've never made eggs with cheese, but I imagine this would work well.
