Brilliant live yeast.
I make all my own bread, and prefer using fresh yeast, which is more difficult to come by these days (I used to get it free from the bakery section of several supermarkets, but no longer!) This yeast is so convenient - when it arrives (in a cooled package - I never had a problem with the freshness so far, even in summer), it is well packaged, but ideally needs refrigeration soon after arrival. I immediately split the order in two batches of 6 and put them in two plastic, lidded containers. One pack goes in the fridge, and I use one block at a time (enough for a 2lb batch of rolls or a couple of loaves). These keep well in the fridge for several weeks. The other I put in the freezer compartment of a fridge-freezer. They keep well for a number of months. I thaw one block out overnight before using - it is best to unwrap them while they are still frozen, as then do tend to liquify as they thaw and if they are still in the paper wrapper it can get a bit messy! I have been using these for a few years now without any problems, so I can definitely recommend them for home baking.

Tasty and highly energetic fresh yeast
This is exceptional fresh yeast. It is incredibly reactive, even though I keep all of mine frozen until ready to use. It has a wonderful smell, feels excellent and it is the only yeast I use. 42g blocks I guess are a little on the large size, but I must admit I use half of one then re-freeze the other half, and I cannot detect any reduction in performance. With other frozen yeasts I find they lose their potency but this eager little colony jumps straight into my dough ready for work.

L'Hirondelle French Fresh Yeast 12 x 42g Blocks
Works really well, but I found out the hard way you cannot freeze as it just turns to liquid when defrosted. I still tried but the freeze process killed the strength

Don't bother. Stick to dried yeast.
Zero activity from this yeast. Have been using dried yeast for over 6 years with great results but thought I'd try this fresh yeast and see if improved my bread baking. It did not. There is no reaction when I put it in water with sugar to check it is active. I used some fresh as it arrived, and frozen the rest as per other people's recommendation. The fresh stuff was marginally still alive and after a glacially slow rise I was able to make some disappointing pizza bases. The frozen stuff has zero activity. I am happily returning to dried yeast. As I write this a 3 year out of date sachet of dried yeast is foaming merrily in a jug of water on my worktop. I will be binning this product. Worth a punt, but turned out to be a waste of money. Less convenient, more expensive, less reliable.
