Sushi ginger - big jar that lasts ages
It is exactly what it says on the jar. I'm not sure why it's pink or what difference (if any) it makes though. It tastes good and there's plenty of it. Many have mentioned the 'consume by' date once opened as being too short. However, if you keep it in the fridge it lasts months, just like any other pickle. Just keep the jar clean (ie don't scoop out the ginger with dirty chopsticks/cutlery) and don't let the ginger slices dry out within the jar.

Beware fridge life
The photo of the jar says, “once opened, keep refrigerated and consume as soon as possible”. The jar I received said consume within 3 days. Huge jar of great tasting sushi ginger. After opening, the shelf life is insufficient to consume even a fraction of it. Good for sushi caterers. Too much for individuals who make sushi occasionally.

Lovely Pickled Ginger, short use-by-date once opened (1 week)
Very tasty pickled ginger. I was a little disappointed how short the use-by-date once opened was (1 week!) as it's quite a big jar and I'll never get through it that quickly - but hey it's pickled right, what could go wrong...?!
