Great in gluten free flour baking mixes
I grind my own gluten free flour mix from sorghum, millet, rice & sometimes chick peas. No matter what grains I use, I have found that using 25% (1 of every 4 cups) tapioca starch makes a great flour mix for baking.

Invaluable for those with sensitivities to wheat or other grains
Those with grain sensitivities (celiac, etc) would be well-advised to try this. Tapioca (aka cassava) is a great substitute. It's milled from cassava tubers. It is very fine. I often mix it half and half with blanched-almond flour, making a reduced-carb option for muffins and other baked goods. The tapioca makes it elastic and the almond adds nice texture, keeping it from getting gummy. Always rave reviews, even from folks with no wheat issues. It keeps well in normal pantry conditions for a long time. My bag from November was still good when I finished it today in June. Best, there is no bitterness as is often the case with some wheat-flour substitutes. And it is way less costly than most marketed alternatives.

Happy to receive this product but dissapointed at the same time!
I was excited to receive this large bag of tapioca flour as I have a few recipes I'd like to try using this. Only disappointed to see it expires in less than 3 months! I will not have this bag finished in 3 months, I bought the large bag as it was better value for money. No now!
