Are there any flat sheets that are fitted at one end so they don't pull loose during the night?

What you're looking for is called a "semi-fitted top sheet". This is not that, but yes, what you're looking for does exist. Make sure you get the kind with a gusset that gives extra room at the foot so there's no extra pressure on the heels or toes of the feet.

Do these sheets pill? My current ones feel like I’m sleeping on sand.

No. My wife sleeps on these and is very particular and prone to complaints if anything is wrong. She has had no complaints. The sheets appear to be very good quality.

The info says 'includes 1 new bottom fitted bed sheet' but the ad says pkg of 3. Which is right?

If you look at the ad, you have a option to order 1 fitted sheet or get a pack of 3. You also have the option of purchasing flat sheet(s) one or three. Price for 1 fitted sheet is around 14 dollars. Price for 3 fitted sheets is shown when you open the ad.

trouble with the sheets staying in place? put a carpet pad under it between the person and the mattress.?

I bought a “waterproof mattress protector (twin xl) fitted undersheet”. It is cool and breathable...39x80”. Fits perfect. I can take a nap and not perspire in 80 degree temp- 90s in the summer in Hawaii.
