Is this okay for hard cheddar or is it only for softer cheese

Yes, this product is very good for use with hard cheese. Some hard cheeses, especially Cheddar, can be a little crumbly, so you might need to set the width of the cut slightly wider to allow for this. It is quick and easy to do with this well-designed product.

How thin does it slice roughly, is it a blade and can you sharpen it

Did not work on hard cheese, I sent it back.
