After waisting 3 gallons of different kinds of whole milk not-ultrapasteurized and obtaining no usable coagulation, I called North Mountain Supply. All I was told was that it worked when she made her cheese, but they have some customers who complained about the same problem I have. Admitted that the rennet is a little weak. So why not indicate it in their Amazon description of the product? She suggested getting a refund from Amazon. The rennet is made in Italy, it indicates no expiration date. By personal experience I can say that rennet made in Italy, looses strength as time goes by and by the 12 months mark is un-usable. Who knows how old is North Mountain liquid calf rennet? Even they don't know.So here I am, out of almost $30 dollars in rennet - I purchased two bottles and tried to make cheese using one first and then the other. Both were a flop. Add to that the cost of three gallons of high quality whole milk and what do you have? Just a hole in your pocket.The moral of the story is: get your rennet from some other reputable company.
