Could this be used to secure 12.5 mm foam tile backer board (like kerdi board) to metal studs? If yes, what screws should be used?

Yes that’s what I purchased them for I used 32 mm drywall screws but 25mm is sufficient

What is the inner diameter for the screw head?

The centre hole will take a 5mm drill bit with a "sliding fit." (IE: drill a hole of that size, if your screws drop in easily, they will fit the discs). The diameter of the indented area is 14mm. Hope that helps.

Can you plaster over these fixings

yes but you would need to tape over them first before plastering as recommended by the manufactures NOTE: Once installed, the head of the fixing should be taped and sealed to avoid any contact with wet plaster. Failure to do so may result in surface damage.

Is there a right way and/or a wrong way round to apply these when installing PIR?

I followed the, what appeared to me, logical with sharp edges pointing away from me, did a great job that is still hanging up after several years. My ceiling and old lather and plaster had dropped down about 30cm right across the ceiling held there by paper. Screwed it back up and finished it again great.
