Why does the 26cm signature pot does not have the sand/cream enamel coating?

Hello, unless you buy the signature models in the Satin/Matt Black from the mainstream Lecreuset standalone or Le Creuset online stores, they will always have a black enamel interior which although is not pretty is more hard wearing I find. I have a couple, 3 infact with the black enamel inside. Love them from Paella or Jollof rice dishes.

can this casserole go straight on to a high gas flame

Dear customer, here is the suggestionns offerd by the producer Le Creuset: "Cooking on a medium or low heat gets the best results — even for frying and searing. Let the pan heat up gradually for great tasting food that’s cooked evenly. If you do need to use a high heat, lower the setting once the desired heat has been reached." Which size cooks a loaf of bread best?

I use 26 cm round and 29 cm oval but only in Black Satin because the black can be used at any temperature whereas the other colours are restricted. I use these all the time for my bread including Sourdough. Hope this helps

Can I cook rice as well in this pot? I usually boil and then let to steam

Hi, you certainly can use the Cast Iron to cook rice. There are several recipes online that would help, but you can boil and then remove from the heat as cast iron retains the heat so well this will cook the rice for you.
