Could this also be used with butternut squash?

I would say no. The plastic item that cuts through the pineapple would not be strong enough for making the squash into chunks (unless the squash was very, very ripe).

Does it remove the pineapple skin

Yes, it seperate the pineapple skin and pineapple meat; very easy to use.

are the three cutters different diameters?

The main cutter is one size, that cuts out the core and and the flesh, the top cutter divides the pineapple into segments once cored. Does this help?
