Did your kit include an instruction booklet? The packaging on mine said it did but there wasn’t one when I opened it.

While it has been a while since we used it, I am fairly certain that it did include an instruction booklet. Is there anything online that you could download?

Please tell me the difference between reverse spherification and spherification sets ?

Direct spherification adds sodium alginate to the flavorful liquid and uses a calcium setting bath and reverse spherification adds calcium to the flavorful liquid and uses an alginate setting bath. Reverse spherification is used for larger 'raviolis' and also any liquids already containing calcium.

What size spheres does this kit make?
