Sachets all say to boil the milk, etc. Would a Yogurt Maker take care of all of this, or would it just be for incubating the pre-heated ingredients?

Always boil the milk then allow to cool to approx 40*C. The Yoghurt maker only maintains the temperature

Up to 3 tota ... In my experience.

Can I use coconut milk?

I think it's worth a try. Not sure if there is something in cows milk that interacts with the live bacteria in the yogurt. But I might be inclined just to do one of the pots with the coconut milk and the rest using ordinary milk.

Can I use 1 sachet for 2 l of milk?

I stuck to the instructions to use it for 1l. Then you can use that 1l to make new yogurt.
