will this stick a stainless steel splashback to ceramic tiles?

i would say almost certainly yes. I haven;t tried it - but the item description seems clear enough to me. If you are worried or have very shiny tiles you could roughen them first to improve the key - but make sure you remove all dust before sticking and don;t remove the surface or the porous underlying tile may affect adhesion. If your tiles are not flat I would not use this and build something with a calking material and silicone seal. It is after all a glue, and not a mortar

Will this stick stone to stone quickly?

The join will need to be supported while drying but once set will bond really well. ( I used it to fix a broken arm on a garden statue over a year ago and it is a perfect mend )

Will this hold composite decking trim? Tried no more nails keeps coming lose after a fortnight

Yes it absolutely will ! But remember that you need to clean both surfaces with white spirit & allow to dry ! Removing contamination to ade adhesion. But there other original product CT1 will do the job & is easier to use . P G &B is really for instant fix of heavy larger items. All the best Aussy.

Can this product be used without a sealant gun?

I would say no because when I used it with the gun it goes off really quickly so it wouldn't give much time to apply it
