How thick is the quilted padding?

Only about an inch. But that's OK for me as it's going on a bed that we don't use - it's for "company".

Fit a twin sleeper sofa mattress?

Dear, our twin mattress pad size is 39" x 75".

Is this safe for a memory foam mattress?

Yes, of course, our waterproof mattress pad is safe for your memory foam mattress.

1 or 2 in the package for the split king?

I got only one, for a twin size bed. From the description and photo here, it appears you will get two pads for a king size bed that is made with two twin mattresses side by side.
