I have a Fossil Gold watch, what size strap do I have to buy?

Impossible for me to say but its easy for you to measure the distance between the strap lugs on your watch. Straps come in standard sizes 14mm 18mm etc so check which of these your watch strap is and order the appropriate strap.

Strap seems small, does the 14-19cm include the watch or is it plus the watch if that makes sense

The length excludes the watch diameter. Nice strap and it fits my wrist well and buckles in the middle of the range of holes that correlates to a wrist 1" bigger or smaller than mine. It's a bit stiff initially due to the double leather construction and it complements my 48 year old Tissot perfectly
