Description says it cuts 14awg, but features says 18awg. Which is it?

From the Klein catalog....Shears wire up to 18 AWG producing a flat, flush cut.Thanks and sorry for the confusion.

Would these work on 1/4 hard or even soft tempered stainless steel wire?

If you mean 1/4 inch , no , not big enough or strong enough . These are for fairly small wire . I use mine for 18 gauge wire or smaller kanthal and copper

Do the grips slip off easily? (I don't like when a tool gets jostled around and ends up with the grips half hanging off.)

The seem to require an amount of direct force towards that end to remove them, I do not believe they would "slip off" from something like jostling. I did note one grip was somewhat easier to remove than the other and it's possible that with age the grips could harden more or deform in shape in some way to make them easier to remove but that doesn't seem super likely. There's also holes in the grips at the very end tip of each which might allow you to place some sort of clip on the metal tong within to further ensure the grips do not leave the tool.

Would this cut thin sheet metal?

It would probably cut very thin sheet metal but is not its intended purpose.
