Maple syrup is a natural product that is basically the sap of a particular tree. It is very high in sugars, rather like honey - and honey still edible after 3000 years has been found in ancient Egyptian tombs. I think that as long as you keep the lid on tight your maple syrup will last for as long as it takes to enjoy it - it's fun on ice cream (mixed with vanilla it becomes maple syrup flavour ice cream), fab on pancakes, good mixed into fresh fruit salad, nice with chopped banana or strawberries, delicious on hot waffles - enjoy!
