Will it make a tiled wetroom floor waterproof? We suspect water is leaking through fine cracks

No it will not!  Penetrating sealer reduces water ingress and makes tile & grout more water resistant NOT WATERPROOF!  If you want to do that then use PSRP Grout Colourant as that is a urethane colorant and that will make the grout waterproof.  However, I would also be looking to see why it cracked in the first place

Going to use this on white subways tiles. Will it stain them?

I cannot imagine it would impregnate a good quality glazed tile and I did not notice that the sealant had a yellow tinge (like some varnishes do) but you could always do a test patch which is what the manufacturer would recommend.  The other option is to find a UK-based manufacturer of specialist cleaners and sealers (eg Stonehealth) who supply sample pots.
