you get what you pay for
I thought long and hard about whether I wanted to plunk down this much cash on a home hobby, and although my DIY cabinet worked reasonably well I was tired of having to baby sit the product so much, constantly re-filling the small tank and fiddling with the DIY control system, so I bought this one.It is my understanding that the owners build these a few at a time as orders come in, and regardless, it is obvious they cut no corners in providing the customer with high quality. I like the large capacity tank. Obviously it has to be monitored ,and water sometimes added, but not nearly like a DIY unit, and now I can go away for the weekend an know my product is curing in a proper environment. High quality hanging bars are provided, enabling you to do as much or as little as you like. I hung 40lbs of sopressata the first time I used it. The digital controls are easy to set and easy to read, even from a small distance. The water tank comes with an overflow trough and there is a light that enables you to look at your product without having to open the door. Unfortunately, the price is pretty high, but there are no good larger units out there for serious home producers and your only two options are to go with a DIY unit or buy some European product like a Stagionello for 5 times the price. If you are serious about charcuterie and can afford this product, it won't disappoint you. I am on my third harvest and everything has turned out extremely well.I took away a star not on account of the unit itself, but some related issues. One was that I did not like the instruction book that was provided. It was actually for a slightly different unit and was confusing , but the unit is very simple, doesn't require much in the way of assembly, and I was able to figure it out. Next, more provided as to what happens as the unit is actually working. For example, I learned that when the unit is being only partially filled, the temp and humidity is best controlled when the product is hung in the center. I discussed this with Miroslav, one of the owners and he indicated the booklet is being constantly improved. Also, in the beginning of the cycle, I was convinced my unit was malfunctioning, but it was explained to me that in the very beginning stage when the product is wet, the unit is working extra hard trying to remove the moisture, and hence the settings look like they are not working properly, but by the third day or so the unit settles down and the settings remain at what was chosen. I also suggested that this should be set forth in the book, so the purchaser doesn't think he was sold a bad unit. I found the instructions confusing as to the filter and how often the suggested washing could be done v. the need for replacement.I contacted the company a few times to get advice, as I hadn't produced in large quantities before and they always got back to me promptly and were eager to help. It was obvious that they are passionate about this art. You get what you pay foir...This is a great product!
