The BEST cookbook for technical people
I have never been a cook. I’m not creative enough to add ingredients not called for, I don’t know how to go off recipe, and I’m not even sure what the cooking lingo is when I read recipes. HOWEVER, this book changes that. As a technical person, this cookbook not only teaches the lingo and the execution, but it also explains the science behind cooking and goes into detail on troubleshooting your meals if they don’t turn out right. I have learned more reading this book than I have in the past 15 years of attempting to cook. For the first time ever, I’m excited to experiment with food and feel like I have the confidence to go off recipe.

Belongs in every home cooks kitchen
This is brilliant.Unlike your average cook book this teaches you how to think through the logical steps a chef must consider for dish development before she/he steps into the kitchen. The consideration of how to apply flavor profile to enhance the main ingredient, perhaps add a complementary sauce, select technique and preparation based on the science and years of professional cooking in high-end restaurants. Well written and easily applied to your daily cooking.This is how you can make any dish uniquely your own. A must have for the serious home cook.
