would it be suitable to use in hostel bunk beds?

I don't see why not. We used ours in a remote jungle lodge . And daughter used it to camp ouside and to escape the bugs

The "floor" is like a thin plastic groundsheet. Similar to a regular tent.

Does it protect from the sun? Does it create any shade?

The net is pretty much for protection from bugs, not the sun.

Do you think it would be possible to fit a mattress in it?

I use one with a self inflating roll up camping mattress. The one I have it is possible to join 2 of them together and this would just fit inside. If you want to use it in for eg a single bed you would probably be better to just put it on top of the bed and use it with a sleeping bag inside or put a sheet down inside to lie on. Hope this helps.
