Sauce ended up powdery on meat. i know i used too much. how to use this to make sauce-like texture? thanks.

When using this incredible spice..use about 2 tablespoons as you marinate your meat.then add coconut milk and 8 oz. of what and simmer on medium to low heat..giving you a delicious sauce and well seasoned meat.

Recipes with duck and goat curry

See Clifford Wright's REAL STEW for an outstanding Aruban goat curry. There is another excellent recipe in the food/travel/adventure novel The Spice Necklace. Both of those I have made several times and can vouch for. Also check sites like allrecipes.com which has user reviewed recipes for just about everything.
