How much power do I need to connect two of the 32 together?

If you won't light up full brightness white light , you just need a DC24V5A 120W power supply .

Where can i order one with an IP 67 rating?

This one only IP30 non-waterproof , of you can buy BTF-LIGHTING WS2811 LED strip IP67 .

I would like to connect 3 x 5m strips together. I obviously need a 24V PSU, but how many WATTS do I need?

If you want to light up all 3 X5M LED strip in white light , you will need about 240W power , it is DC24V10A power supply . https://www.amazon.com/dp/B01D8FM4XO?ref=myi_title_dp You will need adding voltage every 5meter . If you just want to light up some chasing color effects , you may need the power DC24V5A , it is also ok ,adding voltage every 10meters . Anyother product question , you can contact us support@btf-lighting.com

how many 5m strips can be connected in series?

That very much depends on your power supply, and if you are injecting power at both ends and/or in the middle.
