As a vegetarian and when I crave pasta but want to stick to a low-carb diet, this fusilli has become my go-to. I cooked it quickly for a simple dinner with sautéed vegetables and a light tomato sauce. The texture is firm and pleasantly chewy, not mushy like some alternative pastas. No-fuss weeknight pasta
Last saturday, I was running late from the gym and needed something fast. These cooked up in about eight minutes, and I tossed them with just some olive oil, red pepper flakes and parmesan. The texture is pleasantly firm and has the satisfying chew you’d want from a good noodle. I also noticed that I didn't get that typical heavy, bloated feeling afterward, likely because of the high fiber and protein. It’s a very practical, reliable staple for anyone who wants to enjoy a big bowl of comfort food while staying on track with their health journey. Having it as a regular part of my rotation has really helped me avoid the temptation of ordering takeout when I'm tired.

Good flavor, great alternative to regular pasta
A little pricy but a great option for high protein low carb option. This cooks completely different than normal pasta, and I highly encourage you to stand at the pot the entire time to stir it so it doesn’t boil over. Cooks up in about 6 minutes, has a similar taste to regular pasta and when mixed with a sauce or other items you can’t really tell the difference. The pasta by itself however has a unique flavor. It’s not bad at all but it is different from regular pasta. If meal prepping, I’d encourage you to only make enough for 1-2 days out. Any longer than that and it tends to “breakdown” and get an almost gritty texture. This is probably one of the better alternatives I’ve tried and easily recommend it as a go. You get a lot of noodles in the box and can easily portion out several helpings worth

Low carb pasta review
I am a big low-carb eater and this pasta is ok I can definitely taste the plant consistency of it so if you’re new to low-carb, you might wanna wait a few weeks until you get this because you’re probably not gonna like it at first. It’s super healthy and the texture is softer than regular pasta. Cook time is longer than regular pasta maybe by five minutes so it’s cooked.

Characteristics of these Noodles
These noodles are thick, so they don't soften as much as typical noodles. I found that cooking a bit extra helped the texture. Otherwise, these are al dente at best, and require extra chewing. The flavor is okay, but these noodles wouldn't stand alone with minimal sauce for flavor. I would also recommend that you lower the portion size as these are very filling. Start with 1 oz and move to 1 1/2oz if that isn't enough. These are a bulky/filling pasta.

Finally an truly high-protein pasta
I've tried a lot of alternative pastas and this one has become my clear favorite. The macros are outstanding, high protein, low carb, and a genuinely good amount of volume so you feel like you're able to eat a ton. I've used these for a Mediterranean pasta bake, on their own with no sauce (sue me, I'm both a foodie and a food is fuel type), and even in a kugel, and they held up beautifully in all three. Yes, there's a slight beany undertone that's noticeable if you're looking for it, but it doesn't bother me at all and fades into the background once it's sauced up. If you're craving pasta but trying to stay on track nutritionally, this hits. Super filling too, a little goes a long way. Probably don't eat the entire box in one day like I did, because that's a ton of beans

Creamy mushroom dinner
I decided to test these spirals last night by tossing them into a heavy, homemade garlic and mushroom cream sauce. The noodles are much denser than standard wheat pasta, giving the dish a rustic, almost whole-grain feel that stood up perfectly to the thick gravy. I noticed they didn't get soggy or break apart even after simmering in the pan for a few extra minutes to soak up the flavors. The ridges on the fusilli are deep enough to catch plenty of sliced mushrooms in every forkful. While the bag looks small, the high protein content meant I was completely satisfied after just one modest bowl. It’s a very practical, filling way to enjoy a decadent Italian-style meal.

Texture may be off-putting
Texture is a bit different from conventional pasta but the taste is excellent. For some I imagine this will be a deal-breaker. Not happy about the cost/value for money and will probably try other low-carb pastas before buying this brand again.
