Can this be built as 2 separate units instead of one big one?

That isn't posssible as the pieces in between the shelves are inter-dependent. You can however alter the shape and form you want the big unit in.

Could you make this three cubes high? I need a storage solution for the eaves of my house.

Doe it come with the hanging bar?

yes and for 8 cube it has one,12 cube it has two,16 cube it has 3 hanger rails and for 20 cube,it has 3 hanger rails

Would this be ideal to store kitchen bits and bobs in like pyrex dishes etc?

loading capacity for each cube reaches up to 25lbs,you can try,the size of each modular cube is 35cm(length)*45cm(width)*35cm(height), and you can remove some 35*35 panles between cubes to make a bigger sapce.
