Sprinkle with 1/2 teaspoon sea salt and 1 tablespoon safflower oil. Cover with foil and roast at 425O F for 30 minutes. - Add 1/2 the roasted vegetables to the blender. Add stock, pistachios, Miso, and watercress to the blender and puree till very smooth. - Put the mixture into a pot and add the rest of the cooked vegetables. - Bring to simmer, but do not boil! - Garnish with a small amount of very good olive oil (optional) Notes: As a child growing up in Brooklyn, I loved the fresh cauliflower that was available in summer when we would visit Upstate New York. Infatuation with this incredible and versatile vegetable has only grown over the years as I have learned more and more dishes using it. - This chowder is very popular on my catering menus and has been a huge hit at my underground restaurant in Oakland. - Basil can be substituted for watercress. - This soup is also great for a winter evening because it is hearty. - When you prepare the cauliflower and potatoes, remember that these need to be bite size. - For gluten-free diets, avoid mugi miso which is made with barley; and for those preferring to avoid soy, use chickpea misos. Chef Philip Steamed Sea Bass with Ginger & Soy Makes 4 servings ] Dairy-Free, Gluten-Free Ingredients 2 pounds sea bass fillet (or any other flaky white fish) 2 teaspoons sea salt 1 inch of ginger root, peeled and cut into thin matchsticks 1 1/2 tablespoon rice wine (or any dry white wine) 2 tablespoon soy sauce (Tamari, gluten-free soy) 4 teaspoon toasted sesame oil* (optional) 1 tablespoon olive oil 1/2 cup fresh cilantro sprigs Directions - Salt both side of fillet. - Scatter ginger over top of fish. - Drizzle rice wine over the fish and place on heat proof dish for steaming. - Place in steamer and cover, and steam for 10-15 minutes. - Pour water out of the dish. - Drizzle soy sauce over the fish. - Heat toasted sesame oil and olive oil over medium-high heat until they begin to smoke and then pour it carefully over the fish. - Garnish with cilantro and serve immediately. Notes: Sesame oil may be a trigger food for some people, which is why it is optional. - Halibut is quite expensive and this dish can be made with almost any flaky white fish; ask your fish department for suggestions. - In stead of steaming, you can poach the fish. To poach, follow the recipe until just before "placing in steamer," and place in a skillet, then add 2 cups of chicken stock, bring to boil, reduce heat to simmer, cover, and poach for 10-15 minutes. Then, continue cooking instructions from "pour water out of the dish." Sonia Kick-Ass Carrot Cookies Makes 3 dozen ]Vegetarian, Dairy-Free Ingredients 1 cup oats 1 cup flour 1 teaspoon cinnamon 1 teaspoon baking powder 1/2 teaspoon baking soda 1/4 teaspoon salt 1/2 cup maple syrup 1/2 cup grape seed oil 1 cup grated carrots 1/2 cup dried cherries (optional; see Notes) Directions - preheat oven to 375O F - In one bowl, combine oats, flour, cinnamon, baking powder, baking soda and salt. - In a separate bowl, whisk together maple and oil. - Add carrots and dried fruit to this mix and blend well. - Pour the wet mix over the dry mix and gently combine. Do NOT over-mix or the cookies will be rubbery. - These cookies only bake well if they are small. - Drop 1 teaspoon on an oiled baking sheet, 2 inches apart. - Bake at 375 degrees F for 10 minutes. - Be careful not to overcook these cookies as they burn easily after they are complete. This was a huge relief but the story is not over there and I was not out of the woods. Because reflux is a silent killer and accounts for almost all oesophageal cancer cases. In fact most lung conditions lung cancer and throat cancer cannot happen without reflux. A fact l had no idea about. And if you have reflux long enough it is a precursor to those cancers. So having coughed for so long I clearly may be at risk. But the good news is according to Dr Jaime, and she speak at all times with great conviction - you can turn it all around. In a brutally honest comprehensive detailed analysis and a book that is never boring and makes total sense she says “tighten your belts. But it CAN be done”. And in the interim you’ll lose weight ...your cough....your heartburn and years of bad habits, and if you stick with it you gain glowing eyes energy longevity and other health benefits. Look at Dr Jaime and her co-workers. They could be my “kids” . The proof is in the (non) pudding! They rest their own case. Review: Excellent & reputable info along with her Dropping Acid book - Excellent book a sequel to her Dropping Acid book. Read both. Do not be put off by dated look. These contain nuggets of useful info not found elsewhere. As a Doctor I like that it has evidence behind most of what she says & that she has a reputation as a researcher. Has made me look at foods in a different light. Not sure about the recipes as I’m sure I can adapt things myself. Hadn’t heard of alkaline water before & useful to have clarity about quite a few things including medications as there is so much nonsense on the internet about alkaline diets & apple cider vinegar. I read Dr Aviv’s Acid Watcher Diet book too which supports the pepsin theory & is also useful for other things if you want to improve your overall health .Would be good if there was more info from anyone about how to strengthen diaphragmatic muscles.... back to internet for that.

If you have reflux or even a hint of reflux you have to buy this book. I was having second thoughts and I thought it was too expensive at £18 and was about to send it back when I had a quick flick. Within five minutes I was hooked. This doctor leaves no stone unturned she looks at every angle and it is a brilliant brilliant book that I feel sure will change my (and your) life. And If I could afford to get the money to go on a “pilgrimage” to America and to be treated personally by Dr Jamie Kaufman, I would do so because she would transform every aspect of my health I am convinced of it. Excellent book a sequel to her Dropping Acid book. Read both. Do not be put off by dated look. These contain nuggets of useful info not found elsewhere. As a Doctor I like that it has evidence behind most of what she says & that she has a reputation as a researcher. Has made me look at foods in a different light. Not sure about the recipes as I’m sure I can adapt things myself. The book itself is very good and I understand the trend of the arguments
The book itself is very good and I understand the trend of the arguments. However I found that it did not contain the detail I personnally needed. There is enough information to get you started. I have ordered another book by this author and hope there is more of the information in it that I would like to find. The recipes are USA orientated but with research some UK substitutions will probally be found.

Buy Dropping Acid book first
I found the book informative about LPR. Unfortunately there wasn't enough information telling the reader how to start the detox and what to do after. The recipes are good but not enough main course, I wanted a book with weekly meal plan ideas & recipes I could use to make cooking for a family easier rather then cooking different meals. On the site it's advertised as the updated book to dropping acid, but doesn't say you need to buy this book first to give you the information needed to start the detox, whereas in the book it's referred to as a companion book.

Great read for acid reflux sufferers
Was recommended this book by ENT Consultant. Followed the diet plan and had great success especially with "sore throat" symptom I was suffering. Highly recommend.

Godsend if you have LPR
This book is a godsend for anyone who is suffering with LPR. I have learnt so much. The medical profession have not given me a tenth of the information that is in here, in fact they are utterly disinterested. The things I have learned here have given me a plan of action and have informed more research. I am already using some of the things in it to good effect.

Extremely helpful!
A personal thank you to Dr. Koufman! This book was the missing piece to my puzzle. Following my twin pregnancy six years ago, I developped a hiatal hernia which is a lifelong condition I now have to manage. At first I stopped dairy, then gluten, then alcohol, then sugar, then coffee...and it wasn't enough. All the while I was taking PPIs without understanding how detrimental they are to my health. After terrible side effects this last year, I went cold turkey and stopped them all together with the support of this book. In that first month without PPIs it was rough. My body had to go through withdrawl. I was tired and retreated from social life. But I kept on, ate simple, drank a lot of Mineral Water with a PH 8 and let my body rest. What I learned from Dr. Koufman was how to eat an alkaline diet and create healing for the LES and the UES. After 3 months of following her diet, I am now able to incorporate some acidic food/drink paired with alkaline foods/drinks. One short expresso with a homemade oatmeal bar is now possible :). I really liked planning out my shopping/cooking/eating for the week. Being prepared is half the battle. To read a book by a gastroenterologist who actually has acid reflux and understands all the possible symptoms is comforting. She knows what those of us who have the condition are going through. I highly recommend this book to anyone living with acid reflux disease.

Fascinating read so glad I bought this!
This is an outstanding resource for anyone dealing with acid reflux. As a pharmacist, I truly appreciate the depth of medical insight and practical guidance Dr. Koufman provides. The explanations are clear, evidence-based, and empowering—perfect for people looking to take control of their health naturally. The information in this book goes beyond surface-level advice and offers a real understanding of the root causes of reflux and how to address them. The recipes are Asian-inspired so I will have to learn how to make those, although many are unfamiliar to me, they sound very tasty. I love Miso soup! For sure, I’ll be recommending this book often to those looking for long-term, sustainable relief. I’m reading her other book Dropping Acid now. I think she is BRILLIANT and for me to say that…

Very informative
You get detailed information and very useful advice. I wish the 2 weeks diet would cover a broader range of food and be more precise abut how to measure the pH of solid food.

Manageable dietary changes with quick results
I bought this book along with the Chronic Cough Enigma. I have read both books from cover to cover. I started the recommended diet and within 3 days my post nasal drip was gone. I am now a week into the dietary changes and my nasal passage is 95% clear- I can't remember the last time I could breath clearly through my nose! It has also opened my eyes to a series of medically unexplainable symptoms that I have had off and on over the years. I look forward to what the future holds for the chronic cough that I have had for as long as I can remember. The recipes I have tried so far are very tasty.
