Does these beep once or twice at 10 mins to and 5 mins to go?

No, it just counts down the time and beeps at the end of it.

Can you set this to just countdown in seconds?

I have just tested it and it will count down from a max of 60 seconds to zero. Above that it counts down in minutes and seconds. It is easy to use and quite loud. I like the on/off switch on the side.

Does it work as a stopwatch?

Not specifically as a stop watch, but if you set it to, say an hour, and then start it working, it will count down to zero. You then have to calculate the time difference. More complicated I know but useable for the odd occasion.
