Do they dissolve in water? I want to use as a cocktail garnish

I wouldn't use them in drinks. If you were to make margaritas with a sugared rim you could attach with a little frosting on the edge for decoration. Do not put in a drink as a float. They will dissolve into a glob.

Fall leaf may be to eat is ok?

Yes...you can eat it...but it does not taste that great. They are very pretty, however!
