how much do you use for a large loaf

I haven't used it for bread. I made 2 × 500grams panettone using 5 grams for the recipe as well as Lievito Madre. Info probably not much use to you.

Can I ask is this gluten in the malt extract less than 20 parts per million (ppm). If you could confirm that would be great?
