An O-Ring by its very nature is a gasket that seals a connection of some kind. It should not come in contact with any kind liquid be it water, milk, or gasoline. If there is a failure of an O-Ring, it is the wrong size or the connection is of poor quality.

Do the smaller (1 in) gaskets work for a waterbottle spout?

I don't know if it would fit or not, but these gaskets are clearly not food grade.
