Trying to make passion fruit pound cake. In the receipt, they used 90g of passion fruit juice. Do I need mix the concentrate with water and/or sugar?

Oh no!! You do NOT mix the concentrate with anything for baking that cake!! It's the same as juicing passion fruits (squeezing them and using the juice) The recipe will call for sugar and that is all the sugar you need unless you dust with powdered sugar when finished!! It's no different than lemon juice (concentrate) If you are making lemonade of course you add water and sugar to the juice (concentrate)...for baking.....if you used lemonade, not lemon juice (concentrate) you would ruin your recipe, in flavor and color. I assure you whomever wrote the recipe lives where passion fruit is as standard as lemons and limes and is literally squeezing the juice out of the fruit to make the cake!! You just have the luxury of pouring it out of a bottle without all the extra work!

Can you use this for making a passionfruit sherbet?

I'm sure you can. But it's very concentrated, so you probably want to dilute with water.

Has anyone used this for mousse with sweetened condensed milk and Latin American Cream?

Yes, I used this specifically for mousse. It was excellent.

I would love to use this to make a passion fruit berliner weisse. Anyone try this or does anyone know what the concentration of the preservatives is?

I've done this- I just add a good splash to a bottle of beer and BEAUTY! I don't know if you're planning on MAKING beer with this extract- I don't know much about that- but I do know it does taste good in beer-
