The Organic Products Regulation requires that anyone who wishes to produce organic food must first register with a Certification Body. Do these need overnight soaking before cooking?

A bit of a soak does help prior to cooking, but you can do without if need be. I often put them in just-boiled water for about an hour if I have time, with a bit of stock, and then use the same water to boil them until they soften.
