Does this include Dashi?

No, dashi isn't listed as an ingredient. (Ingredients : Water, soybean, rice, salt).

It's a big jar... how long will it last when open? Thanks

If you keep it refrigerated virtually "forever". It is a fermented (ie. living) food, which means that as time goes by it continues this fermentation process. So, basically it behaves very similar to cheese. As it ages the taste gets more intense. Once it spoils you will smell it immediately.

Hi, is this gmo free ? is is suitable for starter soups like traditionnally served in suchi restaurants ? thanks !

Hi, I'm japanese and the label says the soybeans in this miso is NOT GMO.
