Does this product wash out with just water or would I have to use shampoo?

You would need to shampoo it out . It holds your hair in place and washes out with no residue. It is strong hold

I have very sensitive skin and am allergic to parabens, am full of allergies, and have had a bad scalp for years and this does not irritate my scalp if that is any help to you. Otherwise I suggest you contact the manufacturer.

Im a guy with thinning hair. Does this make your hair all clumpy and sticky like most hairsprays?

Absolutely not. I am a young lady (25 y/o) and have exceptionally thin hair with even a small little patch at the front where my hair is so thin you can see through it to the scalp and this does not weigh my hair down at all, non sticky and non clumpy and no white bits/flakes! Be warned though use it sparingly because a little bit has a rock hard hold.
