Are the ends of these cables soldered?

No solder, the strands at the end of the cable are electric welded to stop them fraying and the ferrule at the other end is cast on to a mushroom end made with the strands of the cable, as reliable as a cable for a bicycle can be.

Is this cable compatible with grip shift shifters?

Hi, Yes as long as they are standard grip shifters, ie Shimano then it will work fine.

Does it come with an end cap that can be crimped on to the cable to prevent grating at the cut end?

The ones I bought many years ago DID NOT come with end caps. After cutting to size I soldered the ends to save from fraying.
