For the non-tech savvy, how do I rip my CD collection onto this?

Easiest way is probably to download MusicBee (free), use it to rip your CD's then either use it to sync to the player or just copy them using Explorer. Bear in mind you're going to need a memory card as the M11S doesn't have a lot of memory built in.

All of the music apps I’ve tried so far have hapless playback. These include the Fiio music app, the various Roon apps and Apple Music

Does the Equaliser work with streaming and radio apps, or just the built in music player?

There isn't an EQ on the device. The EQs live in whatever audio app you use. The likes of Tidal and Quboz do not have EQs built in, so you would need to install a third party EQ App from the play store.
