What’s the difference between the borner v3 and the v1001 slicer models?

They are the same product, the V-1001 is distributed by Swissmar and the V3 is distributed directly from Borner.

Is this dishwasher safe?

I would only put it on the top rack. I just usually rinse it cold water a let it air dry. I'm afraid the dishwasher would dull the cutting edge. Just warm soapy water and a sponge should do the trick if it was used for cheese, otherwise just rinse with water if it was used for vegetables. Be careful, the blade is EXTREMELY sharp. Had mine for years. Love it. Enjoy.

Can this handle thin slicing jicama?

Haven't done jicama, but in past I've sliced diakon radish and turnips. The sharp angle of the blades in the v-slicer has worked better than other mandolin slicers with single blades or shallower angles.
