how do you clean this?

You don’t really have to clean it, just dry up the water from the melted ice. I just use a towel.

What's the difference between this one and the other version with the yellow trays and no shield?

You definitely want to one with the shield. Sometimes the ice will break off and the shield helps to protect you from flying ice!
