Can I use egg beaters?

Of course! Actually liquids are so easy to "measure" out, as you can pour them straight in as opposed to guessing whole egg per side... Just made spinach artichoke sun dried tomato egg beater "omelets" this past weekend. Just always be certain to coat both the top and bottom of both wells so that anything doesn't stick. I use Ghee spray (have used solid Ghee as well in the past), but you only need a little in the bottom wells, then I'll brush the top wells and proceed with my ingredients. I'm still loving the versatility of this little unit!

Is there a recipe booklet included?

No, just an instruction manual. You can find loads of recipes online. Just look up Chaffle Recipes.

Is this really a sandwich maker or does this just make waffles?
