Q: What size t-slot plunge router cutter router bit do I need to rout out space for this t-track? Any advice greatly appreciated.

I have used a T-slot bit to cut t-slots in plywood but they were not plunge bits and I don't think they would work for what you want to do. I used that same track when I made a new fence and tabletop for my drill press. I made a jig to cut a 3/4" wide slot in the top and face of the fence slightly deeper than the 3/8" to be sure it didn't stand proud of the surface. I used a 3/8" down cut carbide spiral cutter. I have used this T-track material to make crosscut sleds for my table saw so I know it fits the 3/4" slot on my saw nicely so there is no reason to make it oversized unless you want to be sure it goes in without any problems.
