Best grind setting for Hario V60 with the new c3? Recommended 13-16 seems too fine.

It all depends on your coffee, roast level and brew technique. I've used 13 on Natural and honey process and 16 on washed.

Can i use this to grind flaxseed?

Why not? It is just a grinder after all. Anything bigger than espresso and smaller than perk grind, and not harder than steel should go through. Be aware of what else you use it for, in case of flavors, smell, allergies.

What is the capacity in grams of the hopper of the c3 max pro? i know the catch canister is suppose to be 30-35 grams according to the product page.

About 23 grams is the capacity I get

Can it grind coffee beans to extra fine grind, like the powder or flour-like consistency, even finer than the grind for the espresso?

I just did a test: on the finest grind setting, I'm still seeing "espresso-sized" grains. It does not appear you can go beyond that with this grinder.
