does this item completely cover the powerpoles or just the end as shown in the photo? ie do they go on both ends to completely cover the connection?

They do not completely cover the connection; the photo on the left is an accurate depiction. A connection of two cables with power poles and the covers would leave the mating part(s) of the connectors uncovered.

Do you heat these up after sliding them on?

I tried heating up one rubber boot, and it didn't shrink any more. It really does not need to shrink up anymore, to fit the 2 connectors. If you find your wire size is small, and the boot may slide a bit. You can add a small bit of regular shrink tubing, to the wire end, at the two Anderson Connectors. Shrink that piece, then slide the boot over the shrink wrap and onto the Anderson connector. This makes for a tighter boot fit!

Any chance these will fit over the backside of the 6-10 gauge 75 amp dual connector plug?

The 75A are different, larger, connectors. This housing fits 15A (PP15), 30A (PP30), and 45A (PP45) contacts. The PP45 contacts fit 10 gauge., but are not good for 75A. There is a specific PP75 housing and contacts available, which just looks like the smaller housing.
