Can you beat egg whites to a soft peak with this?

You sure can. My husband slung his shake out of the cup he was mixing it up in the mixer is so powerful. You could do just about everything with it. I recommend it.

Instructions say not to leave food in the beaker.. but it came with a cover? What kind of plastic is the beaker made out of?

It is not meant for overnight storage. The beaker is bpa free plastic.
