I did not get a scoop and the directions only tell how much water per scoop. If I start w/ 1/4 cup, how much should I add or remove to make one scoop?

Hello, One scoop is equivalent to 1/2cup which is also 48g.

It has a nice little kick to it but to even it out use sour cream

That means that the scoop size for this bag is 49 grams or about 1.75 oz. Same formula applies to all bags. Bag weight ÷ number of scoops in a bag = weight of 1 scoop.
