Will this work on Polyolefin (smell through) shrink wrap bags for CP soap?

While I am not familiar with this product, if you think it seals with heat, I wouldn't see why not. The Bag Sealer has a temperature adjustment dial that allows you to adjust for more sensitive plastic films or heavier duty plastics. You can also physically adjust the time the heat is applied by holding the handle down longer or shorter amounts of time. So the bag sealer should cover a wide range of applications successfully.

Will it work with mylar bags? If so, what is the recommended heat setting?

Is there a wait time in between each seal? Like to wait for it to cool down then seal again.

No. No wait time between seals. You set the "wait time" for the seal to complete, but it's only a matter of seconds.

What is the maximum thickness of material this can seal? 6mm?

For coffee packaging 5.4 mil is stretching it - I have to seal, flip, seal again on a high setting. I would recommend limiting to 5 mil.
