Can they be used in the broiler of gas oven?

Maybe if you can find an adhesive to withstand 600 degrees and hold it to the top of the oven. Seriously, why would you put it at the broiler? It is for c atching drippings

Can I use these to protect my countertop under an air fryer?

i am not an expert, but I would cut the oven liner to the size of your air fryer and give it a try. Why? If the liner can take the heat in the bottom of your oven, I believe it can accommodate your appliance on the counter. Try it once, and feel the liner after use, then make your decision.

What is the thickness?

Not thick but it definitely worth it used it in my oven and toaster oven and haven't got any complaints about it hope it answers your question
